Strawberry Purée
- 1 cup strawberries (frozen, or fresh if sweet and in season)
- 2 tsp sugar (skip if using fresh berries)
- 1 Tbsp water (skip if using fresh berries)
Matcha Latte
- 1 serving strawberry purée (from above)
- 1 cup ice cubes (approximately 10 ice cubes)
- 1½–2 tsp matcha green tea powder
- 3 Tbsp hot water (176°F or 80°C)
- ¾ cup milk (180 ml)
Instructions
- Make the Strawberry Purée: Measure 1 cup of strawberries (frozen). Add 1 tablespoon of water and 2 teaspoons of sugar if using frozen berries. Purée in a blender or stick blender until smooth and free of chunks. This makes 2 servings of purée.
- Prepare the Glass: Add 1 serving of the strawberry purée to the bottom of a tall serving glass, leveling the layer gently. Add about 1 cup (10 cubes) of ice cubes on top of the purée carefully.
- Whisk the Matcha Tea: Sift 1½ to 2 teaspoons of matcha powder through a fine mesh strainer into a bowl. Pour 3 tablespoons of hot water (176°F or 80°C) over the matcha. Using a bamboo whisk or a small whisk, briskly whisk in a quick back-and-forth W or M motion until a thick froth with many tiny bubbles forms.
- Assemble the Latte: Slowly pour ¾ cup (180 ml) of milk in a thin, steady stream over the ice cubes to maintain the separation of layers. Then, gently pour the whisked matcha tea in a thin stream on top of the milk to form an even matcha layer. Serve immediately with a straw.
- Storage: Store leftover strawberry purée in an airtight container in the refrigerator overnight. Avoid refreezing if the strawberries were initially frozen. Fresh strawberry purée can be frozen. Whisk the matcha just before serving for best flavor and froth.

- Use fresh strawberries if they are sweet and in season to avoid adding sugar or water to the purée.
