Delicious and easy Thai Peanut Noodles recipe that combines a rich and creamy peanut sauce with flavorful noodles, topped with a sprinkle of crushed red pepper flakes, green onions, and roasted peanuts.

FOR THE THAI PEANUT SAUCE

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons chili-garlic sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon water

FOR THE THAI PEANUT NOODLES

  • 8 ounces noodles
  • 1-2 tablespoons sesame oil
  • Garnish: Crushed red pepper flakes, fresh chopped green onion, crumbled roasted peanuts or sesame seeds

Instructions

  1. FOR THE THAI PEANUT SAUCE: Whisk all sauce ingredients together in a bowl, except water, until smooth. Gradually add water to reach desired consistency.
  2. FOR THE THAI PEANUT NOODLES: Cook noodles per package instructions, drain. Heat sesame oil in a pan, add peanut sauce, stir and heat. Toss in noodles, coat evenly. Serve in bowls, garnish, and enjoy!
