  • 3 tablespoons lemon juice, from about 2 small lemons

Optional fresh strawberry sauce

  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest, from 1 small lemon

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees F. Wrap a 9-inch springform pan with aluminum foil and parchment paper.
  2. Prepare the crust: Mix crust ingredients, press into pan, and set aside.
  3. Make the filling: Beat cream cheese until smooth, add remaining filling ingredients, mix until smooth, and pour over crust.
  4. Bake: Bake for 50 minutes without opening the oven door. Let it sit in the oven for 10 more minutes.
  5. Cool and chill: Cool at room temperature, then refrigerate for at least 4 hours.
  6. Optional strawberry sauce: Blend strawberries, sugar, and lemon zest. Chill before serving.
