Ingredients

Scale

Main Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3-4 cloves garlic, minced
  • 1 lbs lean ground beef
  • 1.5 tbsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 jar marinara sauce, Rao’s (24 oz)
  • 1 can diced tomatoes (juices included), 14.5 oz
  • ¼ cup water
  • 10 oz lasagna noodles
  • 1 ½ cups cottage cheese
  • ½ cup shaved parmesan
  • ½ cup shredded mozzarella cheese
  • 1 cup spinach, chopped

Garnish (Optional)

  • ½ cup cottage cheese
  • 2 tbsp chopped basil

Instructions

  1. Heat olive oil and sauté aromatics: In a large sauce pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat until fragrant. Add the diced onion and minced garlic, sautéing for 3-4 minutes or until softened and translucent.
  2. Cook ground beef: Add 1 pound of lean ground beef to the pot. Break it up with a spoon and cook for 4-6 minutes until browned and fully cooked.
  3. Add seasonings and tomato paste: Mix in 1.5 tablespoons Italian seasoning, 1 teaspoon salt, ½ teaspoon black pepper, and 1 tablespoon tomato paste. Stir well to coat the beef evenly and allow the flavors to meld for a moment.
  4. Add liquids and tomatoes: Pour in 4 cups beef broth, 24 ounces marinara sauce, 14.5 ounces diced tomatoes (with juices), and ¼ cup water. Stir to combine all ingredients thoroughly.
  5. Add lasagna noodles: Break the 10 ounces of lasagna noodles in half and add them to the pot. Make sure noodles are fully submerged in the liquid. Cover the pot and bring to a boil. Let it cook for 12-15 minutes, stirring occasionally, until noodles are tender. Cooking time may vary depending on brand of noodles.
  6. Incorporate cheeses and spinach: Once noodles are cooked, reduce heat to low and stir in 1 ½ cups cottage cheese, ½ cup shredded mozzarella, ½ cup shaved parmesan, and 1 cup chopped spinach. Allow the spinach to wilt for a few minutes and the cheeses to melt slightly.
  7. Serve with garnish: Ladle the soup into bowls and top with an optional dollop of ½ cup cottage cheese and 2 tablespoons chopped fresh basil for a bright, fresh finish. Enjoy warm.

Notes

  • Use lean ground beef to reduce excess fat and keep the soup light.
  • Breaking lasagna noodles into smaller pieces helps them cook evenly and fit better in the pot.
  • Constantly check noodles during cooking to avoid over-softening.
  • Rao’s marinara sauce is recommended for authentic flavor but any good quality marinara will work.
  • Spinach can be substituted with kale or other leafy greens if preferred.
  • For a vegetarian version, replace ground beef with plant-based crumbles and use vegetable broth.
