- 3 eggs
- ½ cup of milk
- ½ cup frozen peas
- ½ cup frozen corn
- ¾ cup grated cheddar cheese
- 2 spring onions, chopped

- 2 sheets puff pastry, defrosted
Instructions
- Preheat Oven: Preheat your oven to 220 degrees Celsius (428 °F) to ensure it reaches the ideal temperature for baking the quiches evenly and creating a golden crust.
- Prepare Filling: In a medium bowl, combine the eggs, milk, grated cheddar cheese, drained tuna, frozen peas, frozen corn, and chopped spring onions. Mix thoroughly until all ingredients are well incorporated.
- Prepare Pastry Shells: Cut circles from the defrosted puff pastry sheets to fit your muffin pans. The pastry circles should cover the bottom but do not need to go up the sides of the muffin cups.
- Fill Pastry Shells: Spoon about 1 tablespoon of the egg and tuna mixture into each pastry circle placed in the muffin pans. Distribute the filling evenly among all shells.
- Bake Quiches: Place the muffin pan in the preheated oven and bake at 220 degrees Celsius (428 °F) for approximately 20 minutes, or until the pastry is golden brown and the filling is set.
- Cool: Allow the quiches to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. This helps them set fully and maintains crispness.
