Stabilized Whipped Cream:

  • 2 cups (16 fl. oz.) whipping cream
  • 1 1/2 teaspoons plain gelatin
  • 2 tablespoons cold water

Instructions

  1. Making the Vanilla Custard – Separate the eggs, whisk egg yolks with sugar and cornstarch. Heat milk with vanilla, temper eggs, cook custard, strain, chill.
  2. Making the Stabilized Whipped Cream – Soften gelatin, whip cream to soft peaks, incorporate gelatin into cream until stiff.
  3. Mixing the Mousse – Combine custard with whipped cream, fold gently to mix.
  4. Serving the Mousse – Chill mousse, top with fruit or cream before serving.
