Vanilla Custard:

- 1/2 cup (100 grams) sugar
- 2 tablespoons (16 g) cornstarch

Stabilized Whipped Cream:
- 2 cups (16 fl. oz.) whipping cream
- 1 1/2 teaspoons plain gelatin
- 2 tablespoons cold water
Instructions
- Making the Vanilla Custard – Separate the eggs, whisk egg yolks with sugar and cornstarch. Heat milk with vanilla, temper eggs, cook custard, strain, chill.
- Making the Stabilized Whipped Cream – Soften gelatin, whip cream to soft peaks, incorporate gelatin into cream until stiff.
- Mixing the Mousse – Combine custard with whipped cream, fold gently to mix.
- Serving the Mousse – Chill mousse, top with fruit or cream before serving.
