These adorable Snowman Truffles are a delightful dairy-free treat made with shredded coconut and sweetened condensed milk. Coconut Snowmen Truffles
- 320g (11.25 oz) dairy-free sweetened condensed milk, 1 regular can
- 4 cups (320g) fine shredded coconut / desiccated coconut, plus extra for rolling
To Decorate
- 3 tablespoons vegan white chocolate, or white candy melts, melted and as needed
- 3 tablespoons black-colored icing, or as needed
- 2 tablespoons orange-colored icing, or as needed
- 24 thin pretzel sticks, 2 inches (5 cm) each
- 12 red candy straps, 5 inches (13 cm) each
Instructions
- Mix the base: Add the shredded coconut and dairy-free sweetened condensed milk into a large mixing bowl. Stir well using a wooden spoon or a hand mixer until the mixture is fully combined and sticky enough to shape.
- Form the snowmen bodies: Divide the coconut mixture into approximately 12 larger balls for the bodies and 12 smaller balls for the heads. Roll each ball smoothly with your hands.
- Coat in coconut: Roll each ball in extra shredded coconut to cover completely, enhancing the snow-like effect.
- Assemble the snowmen: Pair each large ball with a smaller ball. Dab some melted vegan white chocolate on top of the larger ball and gently press the smaller ball on top. Let the snowmen firm up at room temperature or place in the fridge briefly.
- Decorate: Using piping bags or toothpicks, carefully draw eyes and buttons with black icing, and noses with orange icing on each snowman.
- Add arms and scarves: Insert pretzel sticks into the sides of each snowman to form arms. Wrap red candy straps around their necks as scarves. Secure any loose decorations with a dab of melted white chocolate if necessary.
- Storage: Store completed snowmen truffles in an airtight container at room temperature for up to 1 day, in the refrigerator for up to 1 week, or freeze for up to 1 month. Note that pretzel arms may soften over time.
Notes
- The total yield of 12 snowmen may vary depending on the size you roll each coconut truffle.
- If dairy-free sweetened condensed milk is unavailable, you can substitute with 1 cup (240g) thick scoopable coconut cream combined with 1/4 cup (85g) maple syrup. This variation may require adjusting coconut or syrup amounts to achieve proper stickiness.
- Because the snowmen are coated in coconut, icing may not perfectly adhere. After piping each dot, lightly press or scrape the piping tip beside the dot to improve attachment. Imperfections add to the charm and do not affect taste.
